vegan berry crisp

This is a vegan berry crisp. If you're here for the fluff that comes with looking at blogs and finding recipes- you can find that fluff on some of my posts but not here. This time let's get straight to the point.


Equipment:


Ingredients:

- 3.5 cups of frozen berries

- 2 tablespoons corn starch

- 1 tablespoon lemon juice

- 1 teaspoon salt *2 x 1/2 teaspoon

- 1.5 cups oats

- 1/2 cup brown sugar

- 1/4 cup maple syrup *2 x 1/8 cup

- 1/3 cup melted refined coconut oil

- 1 cup white or wheat flour


  1. Preheat oven to 350*

  2. Mix berries, cornstarch, lemon juice, 1/2 tsp salt, vanilla, and 1/8 cup maple syrup

  3. Dump into 9in cast iron skillet

  4. Make crumble topping: combine melted refined coconut oil, oats, flour, brown sugar and 1/8 cup maple syrup. Mix until combined. Mixture should be crumble-y but doughy. Crumble mixture on top of berries.

  5. Put in oven for 45 minutes or until top is golden brown.
